Have you ever wondered how traditional French wine is made? Wouldn't it - apart from the famous grape picking, tastings (dégustation) and wine festivals - be great when you can get a peek into a winery. How wines are made, influence of soil composition, grape varieties, vinification, when a wine leaves the barrel to be bottled, who decides and on what basis?
These and many other questions will be answered during this holiday. At day time you will be a guest in an organic, biological winery at 10 km from Chateau Beaucharmoy during two days. You will be initiated into the oenology, winemaking and winetasting, you will even taste straight from the barrel!
This special offer entails the following:
Day 1
Arrival from 17.00. Welcome with a drink
Dinner at about 19:30 pm
Day 2
Breakfast
After breakfast you will depart to the vineyards. The way of planting, the varieties, local (wine) history, the difference between classical viticulture and organic (natural) viticulture, etc. will be explained to you.
While usually reserved for professional wine tasters you will have the opportunity to drink straight from the barrels and tanks in the winery cellars. The taste of a wine that is still developing is very special.
Lunch
After lunch, the day continues with the initiation in oenology. You will learn in a playful way how to taste, using 'le methodology de la dégustation des vins': Where is the sweet, sour, bitter, where is the difference in smell and taste, where does the flavor disappear .... You will practice your new learned tasting skills on a red and white wine.
After the tasting you will continue practising on different wines
You will be back in Chateau Beaucharmoy around 17- 17:30

We leave at about 10 o'clock for the winery where you make yourself a 'Tarte au Langres. This is a regional dish with regional cheese which tastes very good with the local wine (Auxerrois)
While the cake is in the oven you go down to the cellars where the wine tasting takes place
Lunch (with the tarte au Langres)
After lunch we go in the vineyards. .We take you on a tour and show you all the work in the open air that precedes the actual wine making such as tying, pruning, removing buttons etc. The tour will take about one and a half hours after which you will return to the winery for a glass of wine and then return at the end of the afternoon in Chateau Beaucharmoy

For this offer a minimum participation of 4 people is required.
Prices are per person (including all meals) and vary depending the room and are based on an occupancy of 2 persons per room. All rooms have a private bathroom; adjoined to the rooms 1,3 and 4. Bedroom 2 has its own private bathroom opposite the room door.
It is possible to prolong your stay on a Bed and Breakfast basis.
